Fresh Rainbow Trout

Difficulty: Easy
Prep time: 20 minutes
Directions: Place chunks of butter on top, bottom and inside. Season with lemon pepper and lawry’s salt in same areas. Wrap in tin foil and cook on grill at medium heat for 5-8 minutes on each side (depending on the size of the fish) or until browned and meat starts to fall off bone.




Cafe Rio Style – Pork Burritos or Salads

Difficulty: Easy
Prep time: 45 minutes (pork cooking time = 18 hours)
Makes: 15-20 servings

Sweet Pork
Things you’ll need:
- 5-6 lb pork roast
- 1 Tbsp cumin
- 1 cup brown sugar
- 20 oz bottle of coke
- 12 oz bottle la victoria taco sauce
Directions:
Place pork roast in crock pot and fill about half way up with water. Cook on low for 12 hours. Drain off almost all water, add all other ingredients. Cook another 4 hours on low. Shred pork. Cook another 2 hours.




Creamy Dressing
Things you’ll need:
- 1 pkg hidden valley ranch
- 1 cup mayonnaise
- 1 cup chopped cilantro
- 2 cloves garlic
- 3 tomatillos
- 1/3 cup buttermilk
- 1/4 tsp cayenne
Directions:
Blend all ingredients except mayo in blender and mix well. Then add mayonnaise and pulse until creamy Store in fridge.


Rice
Things you’ll need:
- 3 cups water
- 4 tsp chicken bullion
- 4 tsp minced garlic
- 1/2 bunch cilantro
- 1/2 onion, chopped
- 1 tsp cumin
- 1 can green chilis
- 3/4 tsp salt
- 1 tsp butter
- 3 cups uncooked rice
Directions:
Blend in a blender all but rice. Bring water to boil, add all ingredients. Simmer 30 minutes. Add lime juice if desired.
